Another Fun Filled Saturday Night

While it may not really feel like winter here {highs of 63 this weekend} our entertaining has taken on the quiet, laid back, comfort food, feel the season beckons. I really enjoy this after all the fuss of the holidays.

On Saturday evening we had our friends over for one of my favorite meals ... comfort food! The best part was that Kevin did the cooking. He recreated a meal, from a restaurant in our area, he had a couple of years ago. Braised short ribs in birch beer with garlic mashed potatoes were on the menu. Yum!

My only task was to come up with something to nibble on while he was finishing up dinner. I made my stuffed gouda wrapped in puff pastry. This was something I thought up many years ago and it's my go to for something cheesy and savory.

1/3 cup kalamata olives chopped
2 (or more) cloves garlic chopped
1/4 cup roasted red pepper roughly diced
4 sun dried tomatoes roughly sliced
1 heaping teaspoon oregano
1/4 teaspoon red pepper flakes

Slice the gouda round in half and layer the filling. The order isn't important.

Wrap the gouda round in one sheet of Puff Pastry. Bring the corners together and seal them by pinching together.

Brush with a simple egg wash.

Bake at 350 for 20 minutes or until golden brown.

Serve with a fruit selection of your choice or with thinly toasted baguette slices. We were already having a heavy meal so I decided to for go any additional carbs.

This is basically my husband's way of appeasing {teasing} me for my endless requests {nagging} of taking pictures. He was being quite the ham behind the camera. At one point I was laughing so hard I was actually crying.

We had a great evening together. The guys talked about boring guy stuff ;) and Courtney and I caught up on really important matters like new phone apps, Pinterest, sales and new nail colors. These are life altering topics of utmost importance! :)

Chocolate heaven

I've had several requests for this recipe and I'm happy to share.

Enjoy!

Kahlua Cake

Cake:
1 dark chocolate cake mix
1/2 cup sugar
1/3 cup oil
3 eggs
3/4 cup water
1/4 cup bourbon
1/2 cup Kahlua
3/4 strong black coffee
2 teaspoon cocoa

Mix all cake ingredients together and beat 4 minutes on medium high. Pour into 2 greased and floured cake pans. Bake for 40 minutes. Let cool.

Once you are able to handle the cakes, cut them in half so that you have a total of 4 cake rounds.

*Helpful hint ...
I put mine in the freezer and let them harder. They are much easier to cut and less crumbly.

Filling:
1 cup semi sweet chocolate chips ~ use a good quality brand
8oz. cream cheese
1/2 powdered sugar
1 teaspoon vanilla
1/2 cup whipping cream

Melt the chocolate chips in the microwave. In a mixer, beat the cream cheese until smooth, then add the powdered sugar and vanilla. Pour the chocolate into the cream cheese mixture and combine. Set aside. Beat the whipping cream until soft peaks form. Gently fold into the chocolate and cream cheese mixture. Spread on the layers of each cake round.

Once this step is completed, I place my cake in the frig to firm up a bit.

Icing:
1/2 stick butter
1/2 cup sugar
1/4 cup Kahlua
1/4 cup evaporated milk
1 1/2 cup chocolate chips

Heat all the ingredients, except chocolate chips, in a pan and increase heat until it is just beginning to boil. Add Chocolate chips and stir until melted.

Drizzle over cake.

that's what my holiday decor was all about this year.

Guess what ...

it worked!

By this time {every other year} I'm climbing the walls with anxiety to get it all down and put away so I can have a fresh squeaky clean slate. I don't like going back to school with my house messy and in disarray.

Yes, I realize I should seek therapy for this "issue" but I don't want to waste the money when there are great end of the year sales to be had! :)

Well, this year the scenario is different.

Very different.

I am actually still {very much} enjoying my simple decorations and plan to leave them up the rest of this week.

I rather enjoy all the gold, silver and candle light.

So much so, that I plan to leave my mercury glass and extra candles out for the entire month of January.

This is what we've been snuggled up to every evening for the past few weeks. Comfy and cozy ~ I love this time of year!

When I spied these angels I knew I had to have them! They are moss covered and will probably lose their soft green color but no worries, I can re-cover the wire frame them next year with ease.

Not only to they add height to my table but a special beauty. Oh, and my husband just L O V E S them. In fact, he wishes I had been able to bring a few more home. Well, that's how I remember his response when they arrived. :)

The paper whites are just now blooming ~ so pretty.

A small sampling of my nutcrackers. To along with my theme of the season, I didn't bring them all out this year. Only a few of our favorites. The baker is my all time favorite ~ a gift from my husband.

Just a few more little goodies that brighten my home.

I grew up ice skating ~ lessons at MSU, skating on our lake in Michigan, and the ice rink my father made for me and brother each winter in our backyard. We have a new outdoor rink near us but it's been so warm that the ice is a bit gummy. If it ever gets cold enough, I'm grabbing my skates and heading over.

I made a few ivy topiaries which I plan to share with you as well.

On my last trip to Trader Joe's, a very sweet sales person struck up a conversation as I was getting ready to check out. I don't really remember how it began or all that we talked about but it was fun and a gentle reminder that there are some really nice people left in the world. Anyway, as I was about to leave the store, she came up to me and gave me this sweet little evergreen and wished me a very Merry Christmas. It's been sitting proudly on my island all season. Each time I pass my special gift I'm reminded of my encounter with kindness and the need to pass it on daily.

Holiday Time

I can't believe how quickly Christmas arrived {and left} this year. I was actually doing really well until the last week before the holiday when I was "gifted" the tummy bug and a cold with barky cough ~ these were not on my list to Santa this year.

If that wasn't exciting enough, on Friday before Christmas Eve, after school let out for Christmas break, I was driving down 95 to finish my shopping {delayed due to illness; not insanity} when my transmission went out ~ not the shiny bling I was hoping Santa would bring me this year :(

We rallied {thankfully, Kevin was home and not at sea ... whew!} and enjoyed a beautiful Christmas Eve at our friends. Sadly, I forgot my camera so I have nothing to show of the evening. It was fun getting all dressed up. I bought a great dress for the evening and Kevin looked so handsome. Everything was picture perfect and I have to say that Brenda is a fabulous hostess who remembers every tiny detail and welcomes her guests with such grace and ease. It was an intimate dinner of 17 {her words} with a wonderful group of friends. With amazing talent, she pulled it off in grand style. The evening began with cocktails at their full bar station and then we were escorted to a candle lite dinner. Amazing! Kevin and I are still reliving the night :)

Christmas morning began with a nice slow pace of opening stockings, gifts, followed by a light brunch. It was really nice not to rush around this year.

The pink fleece is a gift from Bentley. He "rearranged" the zipper on mine one afternoon when I wasn't looking. He was very proud of his gift ... hoping to get his paws on this one too, I'm sure.

After a brief clean up, we headed to our friends for Christmas dinner. This was a much more relaxed affair and the best part ... the men do the cooking! How neat is this tradition of theirs?! They wanted to try deep fried turkey so we let them borrow our turkey fryer. Kevin manned the boiling pot of oil ~ he fried two turkys and both were delicious.

It's the end of December and we have green grass. Crazy! This has been such an incredibly mild winter. I'll be honest, I'm ready for snow. Yea, you heard me correctly. I can't believe I'm saying that after last years never ending snow storms.

We ladies had time to chat and enjoy a glass of wine while the guys were prepping in the kitchen.

Courtney's birthday is on Christmas day. Since we had to arrive before all the other guests to get the fryer ready, I gave her gift. I made soft faux fur scarves this year. I'll post more about that later.

My husband is rather handy around the house which has provided many great additions to our home. This past year he helped Mike with a few of his projects in their home. As a thank you gift they gave Kevin a beer making kit. The best part of the gift was the mustache they drew on the box. I'm sure I posted about this but Kevin decided to exercise his facial hair ability this past summer and grow a mustache while at sea. Let's just say that I'm glad this "phase" has past :)

I was asked to bring a dessert with a request it be something in the chocolate food group . Always happy please, I made my Kahlua cake. It's easy to make and soooo yummy! It's great for breakfast the next morning as well ;)

We had a great day filled with fun, friends {their families} and {way too much} fabulous food! It is really dangerous to have a circle of friends that enjoy cooking as much as we do.

My word for the new year ... d i e t ... my jeans are screaming for some relief!

I hope you were all able to enjoy some special time spent with family and friends over the holiday as well.

We are very blessed and being surrounded by the people we love is a great reminder.

Glittery Goodness

Some time last fall, I decided I wanted to decorate with pine cones. Glittered pine cones, to be exact, for our tree and a few around our home for some added sparkle.

It's a simple idea

Inexpensive

Not that difficult to "create"

Only a couple of simple steps

Spray paint, spray adhesive, glitter!

Or so I thought!

What I wasn't prepared for was the lack of pine cones ~ as in none to be found! I ask, begged, and was willing to buy pine cones from friends, family and co-workers. Compliments of our hurricane, we are lacking here in my area!

Nope, Nada, None!

The only pine cones available for purchase are coated in {fake} cinnamon scent. They give me the worst headache. I hold my breath every time I pass them in the craft stores.

I was just about to give up on my idea when Lori came to the rescue. During one of our chats, pine cones came up and she offered to send me some. Apparently, they have more than their share this year and she was happy to share.

I'm thrilled with how they turned out and how wonderful they look in our Christmas decor. Just what I had envisioned.

I've set aside a few of the teeny tiny ones. I plan to add them to my packages once their wrapped {no need to rush in this department, I have 3 more days. Yikes!} They will be the perfect special touch with the satin ribbon and wrapping paper.

Cookie Exchange

I've been looking forward to this afternoon all season. This afternoon was my annual Cookie Exchange. It's always such a fun afternoon. I get to catch up with friends and neighbors, eat girlie finger foods, and in the end, I have an amazing platter of cookies to enjoy ~ yum!

I made chocolate covered cherry cookies for the exchange this year.

In keeping with my "low key" holidays, I didn't go overboard on the menu. No one seemed to notice and for the first time in years, I wasn't stressed. What a joy, I should have done this years ago.

I'm really blessed to have such a great circle of friends. Each of these wonderful women have such amazing talents. There is never a quiet moment when we are together.

My sweet friend and neighbor grabbed a few shots of me while filling my platter. She's a wife and mom too! {aka always behind the camera and never in a photo! :) }

Our week ahead is going to be a crazy one and that's putting it nicely. We are in school until the bitter end :) I'm in charge of putting on our staff breakfast, we have have two parties to attend, and somewhere in all my (nonexistent) free time I need to squeeze in last minute shopping and prepping for Christmas Eve and Christmas.

Is it too late to hire an assistant?

Boxwood Wreath

I was going to order a couple of boxwood wreaths when I realized ....

~We have boxwoods in our yard

~I know how to make a wreath

~It takes very little time to make one

~I could spend the money on something else {that I really want}

so, a crafting I went.

I love the little corner cabinet in my kitchen with the glass front. She just needed a little something, something to dress up for the holidays ~ enter the wreath idea.

My boxwood gathered and secured into small bundles.

Add the bundles by over lapping as you go along.

All finished and pretty darn cute, if I do say so myself.

I love this ribbon. I wish I had purchased all they had in stock when I found it last year. It has just the right touch without being over the top.

On display ~ just what I was looking for to add a little Christmas cheer to my kitchen.

It's simple, homemade, and just the perfect touch.
Not to mention that it brings a smile to my face :)

Holidays with happiness

I love and enjoy everything about the holiday season.

except ...

the chaos!

Some time in August {around the time of the hurricane with no power and plenty of time on my hands to ponder} I made the decision that we were going to celebrate the season this year a little differently.

The following guests will not be invited this year~

*losing tempers
*running around at the last minute
*stressing out over decorations
*Christmas cards with hand written updates
*meeting the expectations of others
*searching for the ideal gift for each person on my list

This Christmas I want to focus on the beauty this time of year holds, my wonderful family and dear friends, and what it really stands for; not what we've created. My goal is to live in the moment of each and every gathering and event over the next few weeks.

I don't want to secretly wish the season over because I'm about to lose my mind!

Last year {after the holiday headaches} I came up with the idea of celebrating our backgrounds. I'm Italian {Sicilian} and my husband is Swedish. Not exactly the most complimentary couple when it comes to decor. In a nut shell, it's simplistic beauty meets gaudy glamour ;) Oh my! It's going to be a decorating and celebrating challenge but one we'll be embracing nonetheless.

I've laid down the law {my law, placed upon me, by me} and set a deadline for all decorating to be finished and in place. I'm working on getting our home ready this week and will finish on Sunday. Whatever is accomplished by this date will be what we enjoy for the duration of the holiday season. If it doesn't make it out of the Christmas bin in time ... oh well. I'm quite certain my family and friends won't hold it against me or even notice for that matter.

So far so good ~
*I'm ahead of the game for my annual Cookie Exchange
*We have plans to have a few couples over this weekend for wine and heavy appetizers.
*Our home is showing signs of a Christmas transformation
*My girlfriend and I have our tickets in hand for a fabulous holiday home tour.

Thanksgiving

We had the perfect Thanksgiving this year. There is so much to be thankful for and we are really blessed to have such wonderful family and friends that are a part of our daily lives.

This year we have been going at top speed most days. After awhile, this pace gets rather exhausting. With that being said, we both craved some major down time.

Our day was relaxing and slow paced from start to finish.

Our menu consisted of many traditional dishes but I tried to lighten the calorie load a tad ~ still very yummy!

I made a pumpkin roll for the first time. I've always been afraid to try anything that required "rolling" as I failed horribly at this process years ago.

Good thing I gave it a whirl because it was AMAZING!

We watched the parade, took a walk, watched a lot of football, read a little and, I even started my Christmas cards.

It wouldn't be Thanksgiving if there wasn't a little napping involved :)

Duty calls

The past month and a half {or so} has been insanely busy. No matter how hard I try, I just can't seem to get on top of my lists ~ help! I hope to {try} get caught up this week if all goes well.

It hasn't been all work and no play. My time has been diversified :)

In keeping with the thankful heart, I thought I'd share with you our very dear friend Mike. He, and his wife Marilyn, are honestly like family to us. On Friday night the four of us met to celebrate all of our birthdays. In a period of three weeks we all have birthdays ~ lots of fun. Each year we get together and go out to dinner. Our window of opportunity was very small this year. Kevin has been gone for a few months with the exception of his brief "visit" in October.

Not long ago Mike received new orders. Sadly, on Sunday, he left for training which will prepare him for his year in Afghanistan. His absence will be sorely missed.

Our birthday celebration was a tad bittersweet. We knew that it would be the last time we'd all be together for a very long time. Mike and his amazing wife, Marilyn, are dear friends. They are the family you'd choose to have if you could. They call and check in on me when Kevin is at sea or on travel and are always willing to help if I'm in need. Mike and Kevin have know each other since their younger days ;) They attended the Naval Academy together {although a few years a part} many years ago. We all met up again a few years ago when the Navy brought us back together.

What a blessing!

We spend holidays together, celebrate accomplishments, usher in New Years and most of all ... have a blast together!

We wish you a safe journey to and from this point of duty!

Autumn Thankfulness

Autumn is natures grand finale of color fireworks.

The harvest colors are so warm and comforting as the temperature starts its decline. They beg you to snuggle in and get compy for a long winters nap.

It my favorite season. I look forward to the beauty nature creates each and every year. If only it lasted just a tad longer.

Thankful Heart

When my blog friend Heidi proposed the Thankful Heart Project, I knew I wanted to join in on the fun. I had high hopes of featuring one of the many blessings in my life each day with you during the month of November. Well, as you can tell by the date, I haven't exactly achieved that goal. So, instead of stressing out, I'm going to bend the rules just a tad and do what I can with my crazy schedule this fall.

I am so thankful that I was chosen to be Nicholas' mom. He has grown into a wonderful young man. Now that he is an adult, I have the pleasure of enjoying a new, and different, role in parenting. No, he isn't finished growing or learning but he is well on his way and my hard work of parenting in his younger years is paying off! Whew!

Nicholas was home a couple of weeks ago for fall break. His visit was nothing short of fabulous. We had a great time together filled with family fun. I'm planning on sharing his visit in the next few days {read I'm really behind on blogging!}

A white Halloween!

The day started out gloomy

Changed over to rain

Slushy rain

and finally ...

Snow!

I must admit that I'm not even the slightest bit excited about the white stuff falling from the sky.

We never even had a fall this year. I feel cheated out of my favorite season.

It has gone from the dog days of summer to a winter wonderland almost over night!

Due to the hurricane {a mere few weeks ago} our trees are all out of sorts. Most of the trees in our area are still hanging on to all their leaves. Usually most leaves have fallen by now and the branches are bare.

Branches full of leaves + heavy snow = no power

The only one, in my home, that was excited to play in the white stuff falling from the sky was Bentley. He was looking at Bozley trying to convince him to join in the fun.

This morning I awoke at 5am to the sound of snow plows ~ ugh!
We had a very bright white view from the window ~ double ugh!

I am praying this isn't an indication of what is in store for us this winter!

My Week

It's been a crazy busy week but I'm really enjoying the ever so slight hint of autumn in the air. I'm really stressing the word "slight" as it's been very hot and humid here in my little part of the world.

Dressing for school has been a challenge. I don't own many {read any} clothes designed for fall in the south. My fall wardrobe features heavy cottons, down, and wool. Since going naked isn't an option, I've had to get creative instead of cute. Not fun.

Anyway ...

My week in review has managed to bring about one of my favorite ingredients .... PUMPKIN!

Our neighbor recently lost his father. His life was celebrated as he enjoyed 94 amazing years of life full of adventure. It's so cute to hear his grandsons speak of him with such love and admiration.

After all the family had left, and their lives had quieted down a tad, {as much as it can with little boys and all their activities} I dropped off a dinner basket on their porch. I made my families lasagna, my friend Lori's amazing bread, and easy peasy, but oh so yummy, chocolate yam cupcakes. Yes, you read that correctly ~ yam. Pumpkin is at an all time shortage in my stores so I've resorted to using yams. You cannot tell the difference. Seriously! Give it a try {Susan :)} and you'll be delighted.

On Sunday, before church, I warmed up the over and made pumpkin cinnamon rolls. These were good but didn't have as much pumpkin flavor as I had hoped for so I'll keep looking for a tastier recipe.

While strolling through Trader Joe's I spied one of my favorite treats. Figs! They don't make an appearance often here in the north but when they do, I take full advantage.

I'm making a fig and brie appetizer this evening to take to a friend's home for dinner. I'll let you know how it turns out. If it passes our strict panel of judges (ha), I'll share the recipe with you.

Chocolate Yam Cupcakes with Yam Cream Cheese frosting

Cupcakes
1 box chocolate cake mix
1 cup mashed yams {from a can}
1 cup water
1/4 cup canola oil
2 tsp. pumpkin pie spice
1 tsp. cinnamon

Cream cheese frosting
8 oz. cream cheese {I use the low fat}
1/2 cup mashed yams
1 tsp. pumpkin pie spice
1tsp. cinnamon

Cupcakes:
Mix all the ingredients together and beat for about 2 minutes on low.

Spoon into desired cupcake tin of choice {I like the mini}

Bake for 12 minutes or until toothpick comes out clean.

Remove to wire rack and let cool.

Frosting:
Beat all the ingredients together until creamy.

Pipe onto cupcakes

Sprinkle with a little autumn sugar

Enjoy!

My students and neighborhood childrened loved them.

Yep, I'll be making those again this year as they were a huge hit!

Since it's not quite Halloween, I tried to go with just a pumpkin theme and use orange and brown {it looks black in the photos} ribbons.
I used what I already had on hand.

The actual invitation is somewhat hidden in the photo since I didn't want my personal information shown for all to see. I used a pumpkin die cut {orange with white polka dots} and printed the time and date in brown ink.

Autumn Eve

Let's start the new season off with a hearty {and yummy} breakfast. I'm not sure if this is more breakfast or more dessert. Either way, it's delicious!

Baked Pumpkin Oatmeal

~Hearty

~Yummy

and semi ~ healthy!

1 1/2 cups oatmeal
1/2 cup syrup {don't use the good stuff}
2 1/2 tsp pumpkin pie spice
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup dried blueberries {or any dried fruit of choice}
3/4 cup diced apple
1 cup low fat milk
1/2 cup pumpkin
1 large egg

Combine all ingredients and stir well. Let this rest for at least 20 minutes. This allows them to combine and moisten. Divide into four greased small bowls. Place on cookie sheet and bake at 350 for 25 minutes or until golden brown.

* I make a double batch for the work week and just reheat it in the morning. It's a great way to start the day and smells wonderful! :)

Back from the DARK

It has been a l o n g 7 and a half days (whose counting!) of living on the Prairie, but we are back and enjoying ELECTRICITY!

Let me just tell you that flushing a toilet has become a luxury and once power was restored, it was the most beautiful sound I've ever heard. I will never take this for granted again. Most of us not living in the "city" have wells. Once the power goes ... so do they! Ugh, double ugh!!!

I have much to share, but will have to wait a day or two until we are back to normal. Thankfully our home is fine but we lost several large branches and our yard is a sea of leaves, small branches and debris.

However, I didn't want to wait to thank those that have emailed me, called or text over the past several days. Sadly, we lost a lot of tower strength and my communication was very limited.

With giddy delight, I introduce my new besties ... the power guys! They are from all over the United States. They are gift giving gentlemen that are working 16 hour shifts far from their families. A big thank you for their hard work and their families for sharing them when our state needs them so desperately. We were told that without outside help, we wouldn't have power for 3~4 months. That should give you an idea of how hard Connecticut was hit by Irene.

When they arrived in our sub division I wanted to kiss them! In fact, I think my husband wanted to kiss them. Actually, there was booth set up and a very long line to show such gratitude! This little *adventure* took its tole on us and taught me a few lessons. I'll share those next.

Last night we went out to our favorite little spot on the water. The boat yard next door was hopping! In prepping for the storm the marinas around here have been pulling boats from their slips. The highways have been filled the past couple of days with trailers bringing boats of all sizes and varieties to safer grounds.

*I took these photos with my point and shoot so they aren't the greatest.

It's somewhat hard to see, but the lift {the Dodson Boat Yard} was hard at work the entire time we were there.

On a *normal* summer evening this marina is packed with boats. Often there are parties peppered along the pier on the boats. It has such a fun and festive feel. Not last night, it had almost an eerie and lonely feel.

These boats have been *parked* in the parking lot as space and time is very limited.

When we arrived you couldn't even see the front of the restaurant through all the boats. Talk about using every available space!

While I was running errands yesterday I watched several of the submarines head out for safety. They are much safer underwater than rocking against a pier.

I've had contact with my son this morning. All is well for now in his area of NC. Thanks Corey for the update last night. I really appreciate it!

We are clearing off our patio this morning and securing a few other odds and ends as we await the storms arrival.

Summer has flown by ...

I can't believe that summer is coming to end in a few short days.

School starts next week. They have delayed our start due to the hurricane that will soon be arriving.

I feel like I've been going non stop for weeks but have little to show for it when I look back on the days. Do you ever feel like this?

Many fun days have been spent at the beach club. It's always a great day when you're with friends, sunshine and a good book! I'm going to miss the sand between my toes.

A good friend and I treated ourselves to a relaxing day at the Ocean House in Watch Hill. After a day of pampering and lunching I was ready for a nap on the beach ;)

Our summer routine always includes Farmer's markets. There is just something about filling my basket with fresh goodies, and preparing them for my family. It just makes my heart happy!

Despite a nasty storm that was brewing, we enjoyed a great concert at Jonathan Edwards Winery with our very good friends. Ben Taylor {James Taylor and Carly Simon's son} and guest, Arnold McCuller, filled the vineyard with their amazing voices! As an added bonus, the concert also benefited Chikumbuso. I have one of their amazing bags that I use to tote my beach items.

I made my yummy roasted antipasto platter ~ filled with fresh veggies, cheeses, tapenade, and freshly baked bread. So good! We have several courses of great food and wine as the night wore on. Extra time was spent on the treadmill the very next morning.

I've been working on a few dresses. No, there will not be a design collection with my name on it anytime soon, but I do have a few cute dresses to wear around my home {with the shades drawn} :) My "skills" in the sewing department are limited! Ha.

Lastly, but most importantly, we celebrated a special anniversary last week. Kevin and I don't normally exchange gifts but rather go out to a nice meal together. However, since this was a milestone, we bent the rules. He *really* surprised me with a ring for my right hand. I wasn't expecting him to put such thought into that little box. I guess he does listen when I ramble on and on and on endlessly ~ on a regular basis :)

Today I am spending the day worrying about my son. He is in North Carolina attending school{as many of you know.} This mama wants to go down there, scoop him up, and keep him safe and sound until the storm is over. Nicholas has assured me numerous times that he has a plan and will be just fine. Probably, but once a mama ~ always a mama! We too are expecting Irenes powerful arrival. The stores have been packed! Many are out of generators, flashlights and bottled water. I planned ahead so we are all set ~ good thing we visited wine country earlier this summer! ;)

To all of my friends on the East coast, you're in my thoughts and I'm praying for your safety!

we had a great evening downtown in Paso Robles. They had live music in their sweet little town square with food, beer, and wine vendors. It was obviously an event that families, neighbors and friends thoroughly enjoy each week. How fun to have this to look forward to every Friday night. Yet another reason to move ;)

I think we need something like this in our town square every Friday night ... right after we get a town square that is!

What a View

The scenery of California is so mesmerizing as we traveled through the countryside. The green is so vibrant against the golden dryness. The symmetrical rows of vines and plants, weedless acres of walnut trees and immaculate farming plots never seem to lose their charm.

{Perhaps it's because nothing in my yard comes remotely close to being so organized and I am envious!}

This gentleman gave us a private tour of his land ... breathtaking! We had the best time at his vineyard. If you were listening in on our conversation, you would assume we were related. Our conversation was so natural and flowed freely and easily. In fact, I think we may have made plans to get together for the holidays. He's bringing the wine :)

It's been a crazy busy summer here in our home. My husband's work schedule has been insane with lots of travel ... opportunity for me! :)

We started our day off touring the Queen Mary in Long Beach. The history of this beautiful ship is impressive and the craftsmanship stunning even after all these years.

"Parked" right next to the Queen Mary is the Russian submarine; the Scorpion. Being the sub riding naval officer that he is, my husband felt the need to share this fine boat with me. Trying to be a good sport {being on subs scares me like you would not believe!} I went along. I was good for about 3 minutes until I hit my head on a hatch and the closterphobia began.

I was treated to a very detailed step by step tutorial of what everything was and how it worked. I know, you're jealous! :)

I'm not sure I would have lasted long with such amenities.

After a guided tour we headed for one of my favorite restaurants that my husband introduced me to last year, Dukes. The food is great and view is amazing!

We enjoyed a late lunch and I did a little house hunting. There are some great deals to be had in the sunny state of California. Now all I need to do is sell our home here and convince my husband to move. I'm starting with the no snow factor ~ ha!

It was a sunny but hazy day which created a photo challenge for me.

The Bestest Banana Recipe

One day over lunch at school we {busy wives, mothers, and teachers all in one} were discussing how to get our families out the door during the school year with less fuss. Most of us do the majority of the prep work for each day well in advance.

I personally try to bake, cook, and freeze as much as I can to avoid the looming melt down during the height of any busy time. This recipe is one of my go tos, must haves, freezer friendly, save the day! Hope it works for you too.

Banana Bread or Muffins

3 ripe bananas

2 eggs

1 cup {lightly packed} light brown sugar

3/4 cup canola oil

1/2 cup sour cream

3/4 tsp. cinnamon

1 tsp. baking soda

1 tsp. baking powder

1 tsp. vanilla

1/2 tsp. salt

1 3/4 cup flour

*Preheat oven to 350

*Mash bananas in a bowl

*In a large bowl combine eggs, sugar, oil, and sour cream. Whisk until smooth.

*Add cinnamon, baking soda, baking powder, vanilla, salt, mashed bananas to the egg mixture and combine.

*Add the flour and stir until just combined. ~ Do Not Overmix! It will ruin the batter.~

*Pour batter into pan of choice ~ loaf pan, muffin, or mini muffin pans.

*Bake loaf {1 hour or until golden}, muffin {18minutes}, mini muffins {12 minutes}

*Remove from oven and let rest until cooled on rack

*Enjoy!

{ Every now and then I like to add nuts, blueberries, or mini chocolate chips just to change it up a bit }

{add a few additional cooking time when adding blue berries}

I’m certain I’ve shared my love for Ina Garten and her fabulous talents Not to mention how I wish I were her or at least related. If I can’t be her, I’ll just copy her J

This recipe was shared with me by a sweet bloggy friend, Suburban Princess. Because of this recipe, we now have a love hate relationship. J I LOVE that she shared it and all its chocolaty goodness. I HATE that it’s so darn good it calls my name and taunts me until I eat more than my share {the whole darn thing!}

It is AMAZING! Don’t let the process scare you. It’s actually really easy. With that said, you do need to follow the steps and don’t take short cuts. The custard really needs to chill until its completely cooled. The other *must do* is making sure your ice cream maker bowl is frozen. I actually keep mine in the freezer at all times so that I don’t have any additional wait time.

Deeply Chocolate Gelato

Adapted from Ina Garten

2 ¼ cups whole milk

1/3 cup heavy cream

3/4cup sugar, divided

1 cup unsweetened cocoa powder

2 ounces bittersweet chocolate, finely chopped

4 extra large egg yolks

2 Tbsp. Kahlua

2 tsp. pure vanilla extract

Large pinch of salt

8 ounces, roughly chopped good chocolate *optional

Heat the milk, cream, and ½ cup sugar in a 2-quart saucepan until the sugar dissolves and the milk starts to simmer. Add the cocoa powder and the chocolate and whisk until smooth. Remove from heat.

Place the egg yolks and the remaining ¼ cup sugar in a mixer bowl and beat on high for 3-5 minutes until light yellow and thick. With the mixer on low, slowly pour the hot chocolate mixture in the egg mixture. Pour the egg and chocolate mixture back in the saucepan and cook over med-low heat until thick. Stir constantly. A candy thermometer will register about 189 degrees. Don’t allow the mixture to boil.

Pour mixture into a bowl and add Kahlua, vanilla, and salt. Place a piece of plastic wrap directly on tip the custard and chill completely.

Pour the custard into the bowl of an ice cream maker and process according to directions. Stir in the roughly chopped chocolate, if using, and freeze in covered containers.

Allow gelato to thaw slightly before serving.

There is no way this batch will be around when my husband returns since I'll be eating for breakfast, lunch and dinner!

Sunday Brunch

There is a sweet little hidden spot not far from our home that hosts not only a fabulous brunch but also beautiful gardens. They also do amazing dinners that I hope to enjoy one date night soon.

We stole away for a little visit to this beautiful spot on a sunny Sunday in the early afternoon. It was the perfect day in every way.

The sun was out
There was a slight breeze
Sweet summer dresses were a must
and slowing down life {even if only for a short time} was required!

Our reservations were shortly after church. This was the perfect time as I always seem to be quiet internally at this time so the transition was very enjoyable.

I've always admired the color yellow on homes. It's just so welcoming. There are two buildings on the Stonecroft property. They offer over night and weekend package deals. We live so close that it wouldn't be much of a getaway for us but I think we are missing out on a special treat.

During our meal we were entertained by a gregarious 3year old who was designated the family photographer for the day. It was too funny ~ she actually knew what she was doing and took several good shots.

This place knows what they are doing when it comes to working with families. They have a lovely lush large lawn with a big basket of games for the children {big and small} to keep them entertained so that all guaranteed a relaxing visit. I myself wanted to join the croquet game that was just about to begin.

Our time together {as husband and wife} has been minimal lately. My husband has been on travel or out at sea A LOT this year. I don't share about that often as I'm a little unsure about who reads my blog ~ slight paranoia. Because of this, I try to enjoy any time we do get to spend with one another as it is brief and he'll so be off again.

We lingered and enjoyed every minute of our time together and taking in all the summer loving beauty. I'm really looking forward to our next visit. I have heard from a reliable source {our neighbor} that their evening meals are over the top! They too had an exceptional visit and couldn't say enough about the chef or service.

I love the pebble roadways and stone walls ~ so New England.

Bulldogs have a bad rap for being the "dumb dog" on the block. Well this little guy had the last laugh!

This afternoon I heard water running but couldn't figure out where it was coming from since I was the only {human} one home. Apparently, Bentley was thirsty so he turned the hose on.

Yup, he figured out how to turn the nozzle on the handset so the water would come out and lapped away.

Mission accomplished! :)

Bountiful blueberries

It has been very chilly with yet another heavy dose of rain (several days long) here in my neck of the woods.

I've had to trade in my cute summer tops and sundresses for sweaters and layers. The weather is causing me to turn on the oven {for heat} to satisfy my urge to bake.

Blueberries are very plentiful in the market right now as well as in my frig. I also had a few oranges in the fruit bowl that needed to be used.

What does one do when they have fruit spilling out of their containers (and you're freezing)?

Make muffins!

Simple fresh ingredients ~ always tasty and so much healthier.

Can you see the fresh orange zest? Even the batter has a slight orange tint from the fresh juice.

The fragrance is amazing.

Fresh from the oven and ready to be sampled.

Recipe

1 cup quick oats
1 cup freshly squeezed orange juice (2 large oranges well juiced)
2 tsp grated orange zest (I add a pinch more)
1/2 cup canola oil
1/2 cup sour cream
3 eggs well beaten
3 cups flour
1/2 cup white sugar
1/2 cup brown sugar
4 tsp baking powder
1tsp salt
1/2 tsp baking soda
31/2 cup blueberries

Combine oats, orange juice and zest. Let sit for at least 20 minutes. Blend in eggs, oil and sour cream. Stir together all the dry ingredients. Slowly mix dry ingredients into the oat mixture. Gently fold in the blueberries. Fill muffin tins and bake 18 minutes or until lightly golden brown.

A Change of Pace

I celebrated my first day of summer vacation by going back into school bright and early this morning.

Yes, you read that correctly.

If you know me well, this doesn’t surprise you in the least. I just don’t do disorganized well … at all!!! This may sound on the edge of being committable but I cannot relax knowing that I have projects that are unfinished, piles, or shops half done. It drives me CRAZY. This in turn drives those in my life crazy.

Soooooo, back to school I went to put all to rest for the summer.

This is the second {or maybe third} load of “treasures” that I brought home this summer to clean, reorganize and store away. It’s a good thing my husband isn’t home to see this display ~ it spreads to every available surface in our living area.
He just doesn’t seem to understand the need for bins upon bins of classroom/teaching materials :)

Tomorrow morning I'll enjoy a leisurely cup of coffee with the paper on my patio and then I’m hitting the beach for some much needed quiet time. My beach bag has been ready to go for several days now. I can't wait for the change of seasons and a very enjoyable slower pace of life for the next couple of months.

*Is anyone else having trouble with blogger? I tried many times to post this last night and it wouldn't allow me ~ ugh!

A Day of Celebration

{This was taken while he was attending Montessori. He loved "his" school! They called him a miniature Mr. GQ ~ we still giggle over this and remains one of my favorite memories.}

Today my sweet boy {now a man} is celebrating a special birthday!

Regardless of his age or height he will always be my little guy.

I vividly remember the day he was born.

He arrived with a full head of white blond hair and the biggest blue eyes. Even the doctor comment on the amount of hair he had for a little blondy.

So sweet and cute!

Nicholas weighed in at 9lbs 2oz

They called him a moose {in a most loving way} in the nursery.

He loved to snuggle and the nurses were sad to see him go.

When they put him in my arms he had a smile on his face which remains in place to this day. Many compliments have been expressed at his happy go lucky, bright and smiling personality. This too is still in place ~ a delightful character trait.

Many of the characteristics have remained while other wonderful qualities have developed. It's been a delight watching him evolve into the person he is today.

The time has gone by so {too} quickly. I've barely had time to catch my breath from the non~stop activities of raising a child.

Today

On this very special day I wish him much happiness, loads of love, and lots of hugs and kisses.

{Garden Party Arrangement}

I have so much to share with you but no time to get the pictures uploaded or a post prepared.The past three weeks have been crazy busy and the end isn’t insight until next week.

For those of you already enjoying summer vacation, I’m wishing you sunny skies, relaxed schedules, and fun family times! I’m almost there as the light at the end of the tunnel is finally visible :)

A few highlights of what’s been going on in my corner of the world...

~ The Child and Family Agency Wine Tasting and Auction was a HUGE success! We had a sold out event with fun for everyone. On top of that, we raised a record amount for our cause which will be greatly appreciated and go to very good use.

~ An evening of celebration was enjoyed at the Coast Guard Academy to honor a few fellow teachers in their amazing accomplishments ~ these women are so dedicated and have hearts of gold!

~ It only took me a solid week but I finally distributed the 5 yards of dirt and 8 yards of mulch around our yard {this isn’t including the original 8 yards that were already laid} that were delivered the week of solid rain. This was an incredible workout/ weight loss plan but next time I’m hiring someone to take on this task.

~ My garden is planted despite the torrential rains and now record heat ~ I’m ready for some normal weather.

~ The Garden Party I hosted in my home for my sweet friend was not only fabulous but we actually surprised her! You have no idea the difficulty behind this task ~ a true miracle

~ The end of the year is here and over the next 2 weeks I’ll be busy with those activities. We are kicking off the fun with Field Day tomorrow. I’m happy to report that the sky will be blue and the sun will be out in all its glory ~ the recipe for a fun filled day at play!

Life in Progress

When my son was in first grade I quickly realized that May was going to be the busiest month of the year ~ December didn't have a fighting chance even with all the holiday hoopla and prep. Well, once again May hasn't let me down. I feel like my body and mind are being stretched as thin as possible and going in all directions.

The weather here in Eastern Connecticut has been ... challenging. Yea, we'll go with that since it's a little nicer than what I'd really like to say. Soon I'll have to move into my own personal ark if this nonsense keeps up. Yes, it has rained that much AGAIN this year. I wish I were kidding but sadly I'm not. However, a sweet friend reminded me, when I had to take the morning off to pump water out of my basement, that I have a home to return to at the end of the day. Thank you for keeping my whining in perspective. With that said, I really have nothing to complain about!

The ground is SO wet that my poor plants have been living in a continuous spa treatment which is causing them to soak themselves into an unhealthy state. The weather is turning warmer this week {accompanied by showers} so I rescued them and began the laborious project of planting. Why does this step always take ten times longer than I anticipate?!

The window boxes are completed ~ one check off my list!

A little refresher after working hard in the yard and basement. My favorite ~ lemon and lime.

I have been waiting {not so patiently} for these to arrive. They are the reason I have not shared my kitchen remodel. It's a little naked without the back splash. Long ago I saved a picture of this tile in my inspiration binder. I was knew EXACTLY what I wanted when it came time to choose the tile for our kitchen. Done! Or not so fast ~ I didn't have a name or style and no tile place around here ~ from Greenwich to Providence ~ recognized the image in my picture. I knew I would have great regrets if I settled for something else knowing what I was looking for was out there ... somewhere. After many hours of research on the web I finally found what I was looking for. They are all handmade which means extra turn around time. When they arrived one of the three boxes was damaged so I've had to unwrap each individually wrapped tile to make sure they aren't broken or chipped.

I'm hosting a garden party in a few weeks to celebrate a very dear friend. Keeping my fingers crossed in hopes that our wetlands will dry up and my yard will have a chance to bloom.

The other morning I had to laugh at myself as I was spreading mulch at 5 am before getting ready to head off to my classroom. Why ? Because it was the only window of time with no rain in the forecast!

I'm ready for summer break!

Brimfield ~ a true field trip!

This is an event I look forward to for months in advance. It's held 3 times a year but we always hit it in May. We leave bright and early for the all day adventure. This year my husband was home for a couple of days and was able to tag along for the fun. Fortunately, we both enjoy this trip so it's an opportunity to spend some time together {one of my goals for the year} as well as find a few new treasures for our home.

Brimfield goes on for miles and miles and miles! The fields are amazing with their showcases of treasures and trash ... you know the saying. By the end of the day I'm exhausted! You simply cannot view it all in one day. Sadly, I never have enough time to allow myself two days for this treasure hunt.

There is one way in and one way out of Brimfield. If your arrival timing is off just a tad, you wait in line and end up parking in the back 40. This is the hardest part ~ almost there, yet still so far away. Ugh!

I've been going to Brimfield for several years now. I always go with a list in mind and always come home with everything EXCEPT what I was looking for :) That's part of the fun.

How about a sweet little chair for my desk? There were SO many to choose from at this tent. I fell for the back on this little beauty and it's carved design.

This vender was amazing! It is a little {or big} girls dress up dream come true! The hats were gorgeous and his display was just beautiful. It really belongs in a high end boutique. He was quite the character with very charming qualities. I'm secretly keeping my fingers crossed that hats make a comeback ... love them so!

Over the years I've found dealers and vendors that I really like and make a point of going to their booths first to see what goodies they've brought to the show.
The displays are becoming more creative {selling point} and intriguing. There was more than one time I felt the "need" to have it all. Not to worry, my well grounded husband was there to bring me back to reality. **Note to self: leave husband home next time** :)

A few trinkets that made it home with me. I actually had this antique secretary on my list and much to my surprise I found one! I think this may be a first for me. These sweet little pictures will look great in our hall and I quickly grabbed the ice bucket when I saw the unique shape. It's a good thing I eyed it when I did since two other women were on my heels. I'm going to use the silver in my picnic basket. I thought the butter knives would make perfect spreaders and can you see the serving spoons? They are monogrammed! :) I'll put these new lovelies to good use during the spring festival at Jonathan Edwards Winery in a few short weeks.

I have a few more fun finds to share with you but I'll save them for another day.

Spring Break

We had a very late break this year. With that said, we still don’t get out of school this year until late June. My social calendar was light with hopes of tackling a few home projects. After all, doesn’t the word project just scream rest and relaxation? Yep, thought so! I started off in the right direction. Day one was spent with these fine fellas. The family room was getting a much needed face lift.

We were primed {pun intended} and ready to go until I felt a gurgle in my stomach. Oh joy, I was treated with the horrid stomach bug that ripped through my school. Trying to keep an upbeat outlook, I managed to get through my stack of magazine and drop 5 pounds in a matter of a couple of days. Talk about a diet plan that works!Once I was feeling better, I finished the family room and few other cleaning projects on my list.

One afternoon I treated myself to a much needed pedicure ~ raspberry fizz. A little pink always makes you feel better! Love my monogrammed Eliza B's and so happy to have ditched the socks for the spring and summer season.

I enjoyed a few of these. I may have a slight addiction to ice coffee. Once I switch from hot to cold, I know that summer days aren't far behind and that always bring a smile to my face.

Spring doesn’t really begin until my visit to Eliza B. The choices were over the top and I came away with these lovelies. I love supporting family businesses. Yes, there really is an Eliza. I’ve met her on more than one occasion. Not only is she a brilliant business owner but she is as sweet as sweet can be ~ not to mention beautiful! Her mother and father are just as warm and kind. The shoes are made right here in Essex Connecticut not far from our home. They also make belts, bags and dog collars and leashes. Bentley and Bozley sport the USNA fighting rams collars. Funny enough, we bought them in Annapolis MD while attending my husband's Naval Academy reunion.

The highlight of my break was having my son home. I was armed and ready for his arrival. Can you see how excited he was to see me {and my camera} as he approached my SUV? :)

Let me just say that having a college student in your home is exhausting! I’ve forgotten the hectic schedules they keep not to mention their hours. Since Nicholas hasn’t been home in a while he tried to reconnect with as many friends as possible. This meant I didn’t get much sleep.

Nothing like multitasking while dying Easter eggs. It wasn't top on his list but he was a good sport and carried on the tradition. Deep down, I think he really enjoyed himself :)

I was able to get some work done in my yard. I planted these last fall and was SO excited to see them pop up this spring. They are a frilly tulip with layers to them ~ very pretty! I like them so much that I'm going to plant more this fall. That is if I can remember the name. I put a marker next to them but during the raking, it has disappeared. If you happen to know the name, please share.

Since we were all home on Saturday morning we had a pre-Easter breakfast. Growing up we called this monkey bread. For the life of me I have no idea where the name came from or why but it is a family favorite. We had a relaxing morning lingering around the breakfast table. One of my favorite treats is not having a time schedule that has to be met. It doesn't happen often but when It does, I enjoy every second of our time.

Before I know it, the week was over and I was back in school. Nicholas is in North Carolina where it is 85 degrees with perfect beach weather. I know this because he reminds each time we talk. Is it possible to ground your college age son for rude comments? :) I'll admit I'm VERY envious!

Easter blessings

Easter morning welcomed us bright and early with sunshine and warmth. What a perfect setting to a fabulous day! The morning festivities started early as we had plans and deadlines to meet all before noon.

It was a lovely start on a beautiful morning to praise Him!

The Easter bunny delivered {with help from mom :)} fun filled baskets loaded with goodies. We don’t often have candy or sweets in our home so on Easter and Christmas it’s a treat to receive your favorite sweets. There are many and they are meant to last awhile and they do ~ I just threw out candy from Christmas.

Mr. Easter bunny gifted me a pretty white and pink basket of Godiva chocolates {I’ll be hiding those in a safe place} and a lovely lily. Oh, the fragrant beauty!

It wouldn’t be a holiday without a few funny photos. Do little boys ever really grow up? I hope not, I still enjoy the silly side of Nicholas :)

{I was so excited to have Nicholas home for Easter! It's really hard on me having him so far away}

Due to a tight schedule this year, we decided to go out for brunch. At first I was a little disappointed that we weren’t going to have our traditional family meal but quickly rebounded when I realized how nice it was outside and I was going to get to spend my afternoon playing out in the sunshine rather than be stuck in the kitchen!

Nicholas helped me get my greenhouse up and in operation. I’m really off schedule with Easter and my spring break being so late this year. With the extra help, I even had time to get a few trays planted and tucked away in the greenhouse. With the nice weather on the horizen, I'm looking forward to planting my garden.

We also did some raking, cleaned and placed the screens in the windows, placed new cocoa liners in the window boxes, and prepped the herb garden.

Thanks for the help Nicholas; it’s greatly appreciated!

Our holiday ended perfectly with a little family time. Hand and foot canasta is a card game that we have played for years. In fact, it may be the first card game Nicholas actually learned how to play when he was just a little guy. We also enjoyed a few of our favorite snacks. I could eat brie with every meal! Our treat tier was our last {gluttonous} over the top yummy treat.

It’s back to healthy eating for all!

We had a glorious Easter.

As I reflect, my heart reminds me that I am truly blessed with a wonderful husband and son.

His blessings are enormous and not to be taken for granted!

Egg~cellent Idea

I'm really late in posting these ideas but life seems to get in the way and take away from my blogging time. It also doesn't help that my picture files are having issues and I can't find all of them that I wanted to show you.

Last year a clever friend of mine created the most adorable Easter egg trees. I knew then and there that I was going to borrow her idea this Easter. She spray painted her tree in a soft pink. As much as I love the color, I went with creme with the theory that it will go with all my other Easter decor. I created two of these egg topiaries for my home. One for the living room and one for the dinning room.

This was not only an easy project but it turn out so darn adorable! I'm going to keep my eyes open for an egg wreath on the after Easter sale table next.

Once the egg trees were dry, I hot glued spanish moss into the crevices around the eggs. This too was very easily done and adds so much to the finished project.

The smaller egg tree came in an urn. The larger one needed a little something to dress it up so I placed him in a pewter serving piece that was just waiting for something special.

With the crafty bug in my system, I moved on to an Easter egg tree. Once again, oh so easy with a fabulous turn out!

I found the pink gilded eggs at HomeGoods and the paper mache eggs at Michael's. I already had a healthy stash of Martha Stewart glitter in my art room.

The "tree" is a branch from my yard that {yep, you guessed it} I spray painted then mounted in a larger urn that I had on hand.

To create the glittered eggs, I coated them in craft glue, sprinkled on the glitter, and let them dry. For the hangers, I used narrow satin ribbon which I adhered with a dab of hot glue.

I must admit that I'm really enjoying the new additions to my Easter decor this year. There is just something about a homemade item that brings a little welcomed warmth to a home.

by the blooms, if not the weather, that spring has sprung.

I'm really really ready to be outdoors after our marathon winter. With some luck, I hope to have my green house up by the weekend so I can start some of my seeds and pick up plants when I find them at the local garden shops.

It's been chilly and rainy here but my blooming beauties aren't letting a little weather hold them back. Each day I see a little more green and a little brown in our yard ~ yea!

This week I received the nicest email from a sweet woman that follows my blog. Not only does she read my posts, but her husband peeks in to see photos of our bullies, Bozley and Bentley. So here you go Jon, these are for you :)

We hired a gardener this year. He's awfully cute but not all that productive. However, does do a good job of supervising and picking out a nice sunny spot in the yard during his break time ~ which seems to be most of the time he is outdoors!

Bentley decided to take some time and smell the flowers ... and walk on them, chew on them and lay in them. Now if only we could get him to pick up a rake and get to work!

What a Week

It's been an eventful week here in my little life. Each day provided a new entry for the Winner of the Week Award.

The entries ...

** my cold that won't go away ~ it's been lingering for the past couple of weeks
** sneezed on, coughed on, sneezed on, coughed on, for the past few weeks by sick students
** vomited on by very sick child at school {almost the winner}
** Bentley went lame with yet another round of tick borne disease ~ trip to Vet before school
** field mouse moved into the wall of master bedroom ~I'm in denial, there are probably more than one.
** husband is away; of course
** house is in total disarray from on going projects
** family room is half primed because I can only work on it in the evenings

In true Hollywood style, the best was saved for last ...

After a L O N G week I was so glad to finally have Friday behind me with the promise of a relaxing weekend on the horizon. I had plans to meet friends for dinner and the rest of the weekend was for finishing up my painting project and getting the rest of our home back in order ~ it's all been affected by our home projects.

Well, that's not exactly what LIFE had planned for Friday evening.

I arrived home to a beeping noise. The kind that a dying battery in a smoke alarm makes. After letting the dogs out of their kennels, I went upstairs to access the situation. The smoke alarm was fine. The Carbon Monoxide Detector however wasn't. Yep, it was beeping and flashing. Great, just what I needed for the final entry into my Winner of the Week contest.

Ladies and gentlemen, we have a WINNER!

After grabbing the phone, getting Bentley and Bozley, I called 911 and let them know the situation.

They arrived in style and promptly went to work. Due to the potential seriousness of the situation, they donned all their protective gear and meters.

Just before setting off to assess my home, I felt compelled to apologize for the condition of our home. Yes, I AM that neurotic! After a quick low down of our projects which have caused such havoc in our home, I felt better. Seriously, I didn't want them to think we were such slobs.

My neighbor was politely laughing at me during this "prep" time.

Bringing the detectors out from our home to have them tested.

Reviewing the equipment from our home ~ me standing numb.

The whole time they were in my home, I was trying to come up with a plan ... where does one go with 2 dogs, a husband away? We have a plan for just about everything but not this type of situation. I do not like being unprepared or surprised by the unknown.

In the end, all this commotion was caused by a faulty carbon monoxide detector.

Thankfully, all is well and life is back to {chaotic} normal.

I was very grateful and relieved with the news. I'll be adding a new detector to my list of things to buy this weekend.

A Little Sunshine

We've had some sunny days this week that have put a little spring in my step, smile on my face and brightened my disposition tremendously!

With my new found energy, I made a batch of these yummy lemon and orange poppy seed muffins.

They are moist, delicious, and melt in your mouth!

The perfect way to start your day with a steaming cup of coffee or an afternoon delight.

The bite size mini muffin can be a little dangerous ~ they pop in your mouth a little too easily.
Best of all, they are the perfect gift of sunshine to share with friends and brighten their day :)

Have a fabulous Friday!

Ingredients
2 cups all-purpose flour
3/4 cup white sugar
1/4 cup poppy seeds
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2eggs
1 cup lemon flavored yogurt
1/4 cup vegetable oil
1 tablespoon grated orange zest

Directions

1.Preheat oven to 400 degrees F (205 degrees C). Lightly grease a muffin tin.
2.Combine the flour, 3/4 cup white sugar, poppy seeds, baking powder, baking soda and salt.
3.In a separate bowl mix the eggs, yogurt, vegetable oil and orange zest. Blend well and pour over the flour mixture. Mix until just combined. Do no over mix!
4.Spoon batter evenly between the prepared muffin cups. Bake at 400 degrees for 20 minutes.

I thought by now we'd be feasting on some of my favorite spring like meals but instead we have a fire blazing, I'm still wearing every article of clothing I own in hopes of staying warm and yes ....

IT'S SNOWING OUT!!!

AGAIN

I guess it's safe to say that my disposition is in need of a little adjustment. Nothing a little sunshine, warm days and something besides wool and layers to chose from my closet each morning. Seriously, I am so tired of wearing winter clothing. My spring clothes in their bright colors are begging to come out and be seen!

You know it's getting bad when the weatherman starts giving you pep talks about looking on the bright side ... spring is already here, but the proof isn't far off. I'm getting therapy lessons from the man who can't even get the forecast right. Yes, it's getting that bad here in Chillyville Connecticut.

On a cheery note {see, I'm trying :) } this is a fabulous soup that my friend shared with me last week. I am adding it to my recipe binder for future fall and winter menus. 

Lasagna Soup

Soup ~
1tsp. olive oil
1.5 lbs spicy Italian sausage
2 cups chopped onions
6 cloves garlic
2 tsp oregano
3/4 tsp red pepper flakes
2 tbs tomato paste
1 14 oz. fire roasted diced tomatoes {with juice}
1 28 oz. diced tomatoes {with juice}
3 bay leaves
6 c. chicken broth
8 oz medium size pasta

Cheese center ~

8oz light ricotta
1/2 c. parmesan cheese
1/4 tsp salt
dash of pepper

Shredded mozzarella for top

Heat olive oil over medium heat. Add sausage and cook for 5 minutes. Add onions, garlic, oregano and red pepper flakes and cook until softened. Stir in the tomato paste. Incorporate the diced tomatoes and begin to simmer. Add the bay leaves. Bring to a boil for a few minutes and then turn down to simmer for 30 minutes. Raise the heat to medium and add the pasta. Watch to make sure it doesn't over cook.

While waiting for the pasta, blend the cheese mixture.

In the bottom of each bowl place a healthy dollop of the cheese mixture. Spoon the soup on top of the mixture and sprinkle the mozzarella on top. Let it sit for just a few minutes to allow the cheese in the bottom to become oozy. Oh yum!

I so appreciate your kind hearts and giving spirits.

Thank you for all your prayers, sweet comments and emails. I am beyond thrilled to share with you that our school family is safe and in a few days will be making their way home to the United States. I wish I could share more details with you regarding the condition and state of families in Japan, but at this time, we aren't aware of any. I hope to hear firsthand once they return and any possible suggestions of how we can additionally help. My thoughts and prayers continue to go out to all those in Japan.

Prayer request ~

There is a wonderful family in my school that is currently visiting their family in Japan. I wish I could share a photo of this sweet 4 year old ~ he is always bubbling over with happiness and has a smile that just melts your heart! He and his family have been in Japan a couple of weeks and we are not certain where they are staying. Numerous attempts to contact this family have been made and each one has returned silent. We are all hoping and praying this is simply due to lack of ability to communicate in the current state of chaos. If you have a few minutes, would you please lift them up in prayer for their safety and well-being, as well as all the others, during this time of turmoil and devastation. Thank you, I know the family would appreciate your prayers.

Thank you SO much for your kind words and prayers. Nicholas is doing much better each day and most importantly, he is owning his success through the process. While I haven't shared all the details, they are too personal, of his bumps on the road of life; I have shared how important it is for him to work through this using his tools that we've taught him for so many years. We, as his parents, have offered him support, guidance and an abundance of love along the way. I am SO proud to say that while the struggle is very difficult, he is rising to the occasion and proving to himself a strength he didn't realize he possessed. We knew he had it all along but he had to go down this road to find it for himself. He is becoming aware of who he is as a young man and ultimately building his self-esteem to a level that can only be achieved by hard work. This my sweet son is called LIFE! As we all know, he will be faced with additional challenges as he ages. Thankfully, he will be able to draw upon this experience and apply his confidence to the next set of hurdles that is in store.

This beholder is hoping that her kitchen will be back in working order very soon and be just as beautiful as the vision she has in her dreams.

It's not exactly Starbucks but believe me, this scene would be a lot uglier if I didn't have my morning coffee. I came downstairs to find this "set up" one morning and had to laugh at the normalness of morning coffee amongst all the chaos.

I think I can see a glimmer of light at the end of the tunnel. Well, I'll be able to once we have electricity in the kitchen :)

Parenting

This week I've been greeted with the reality that parenting doesn't end ... ever. Well, it's not a new revelation exactly. Parenting changes as your child grows but the rules don't. The love intensifies, as do the worries, while each stage of growth ticks by. They require fewer boundaries for safety yet greater guidance.

Each morning I gaze out at the welcoming lines at school and I silently say to the parents of the young, enjoy the days when a kiss or hug will solve a major crisis, a battle over mixed matched clothing isn't worth having, and the reassurance of an afternoon pick up calms their child's world.

Those were the days!

It's a little more difficult {read lots} when they become older. As in young adults older. When they live many states away yet still need their mommy and daddy {sometimes} but don't want to admit it or don't know how to ask at the moment. They feel lost and want to be scooped up into our laps where we tell them everything will be just fine. However, there is such a level of, self imposed, pride, that they don't tainted. Yet what they don't understand, at this age, is that asking for help is a sign of maturity.

They also don't realize the toll it takes on us {parents} because we can no longer jump in with our Super Hero Cape on and save the day! No, instead we must allow them to fight their own battles so that the sweet victory is all theirs and the reward is self-confidence! Something that cannot be given and must be earned. It's a required lesson in becoming independent. I've had to trade in my magical cape for prayer. Lots and lots and lots of it I might add. God and I are bestie these days. He is on my speed dial and hears from me quite often.

With a few more years of life experience on my side, I know he'll be fine. We {parents} recognize these trials as mere speed bumps on the rough road of life. Oh, they were painful when we passed over them so many years ago so we understand and commiserate the pain. We too thought our world was ending or least drastically scarred and would never be the same. If only I had a video tape to replay and prove that yes, you will survive.

What my sweet son doesn't realize is that we, as his parents, are hurting with him and share in the pain because it hurts us to see him hurting. It's hard to stand silently on the sidelines of this game called life.

Grilled salad

I promised that I would share this salad with those that have asked. Not only is this incredibly delicious, it's very easy to make.

Grilled Romaine Salad with Blue Cheese
{adapted from Alex Guarnaschelli}

Dressing:
6 cloves garlic, peeled
1 teaspoon kosher salt ~ I don't use because the anchovies and capers are salty enough for my taste.
1 tablespoon fresh lemon juice
1 teaspoon capers
1 tablespoon sherry vinegar
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce
1 teaspoon anchovy paste
1/2 to 3/4 cup good quality olive oil

Salad:
3 romaine hearts, halved lengthwise, washed and dried
20 basil leaves
1 cup crumbled blue cheese
kosher salt
1 lemon juice

Preheat grill to medium

In the blender, combine the garlic, lemon juice, capers and vinegar. Blend until smooth. Add the Worcestershire, hot sauce, anchovy paste, and 1/2 cup of olive oil. Blend until smooth. Taste for seasoning. Adding the remaining oil if desired. Set aside.

In a large bowl, toss 4 of the romaine halves in a little olive oil and season with a sprinkle of salt. Put them in a single layer on the grill and cook for 3 minutes. Turn and cook on the other side for an additional 3 minutes. The romaine should feel slightly warm and tender. Transfer the halves to a large platter. Spoon a little dressing on each. On a flat surface, finely chop the rest of the romaine and add it to a medium bowl. Add the remaining vinaigrette, a touch of lemon juice and the basil leaves. Toss to coat the romaine.

Top the grilled romaine with some of the chopped, dressed romaine. Garnish with crumbled blue cheese and serve.

~ I don't dress the entire salad with dressing so that a portion can be saved.
~Add a little grilled chicken and it makes for a great lunch the next day.

Due to my limited kitchen equipment at the moment, our meals are on the quick and easy side these days. This evening I'll be grilling so this was a perfect choice of salads.

I should also admit that I've made it 3 times since my sweet husband introduced me to it on Valentine' Day.

Together time

You may remember a few weeks back when I shared my goals for the year. One of them was to spend more quality time with my husband and get reacquainted.

Well, this afternoon we did just that. I'm not sure a romance novel has ever been written about two lovers standing on ladders with matching spackle knives, gazing into each other’s eyes over a spray bottle while scraping white gunk off their ceiling. Probably not for good reason!

It wasn't exactly the romantic afternoon together that I had envisioned but, we were side by side sharing many laughs. Sort of. When I wasn't busy removing spackle from my hair or what had fallen down my shirt. I know, sexy!

By the time we were finished, it looked like a flour bomb had gone off in our kitchen. The dust and globs had covered everything including us.

Who invented popcorn ceilings?
Why?
They are hideous!

I will NEVER buy a home with them again.

We agreed that now was the time to remove the nasty white nubs while the kitchen is under repair. I'm willing to pay someone when we move onto the living room.

This will all be a vision of the past in a few short days.

My new granite counters will be here in no time, my ceiling will be a pristine white and I'll be enjoying my new gas cook top. I can't wait.

Weekend recap

This weekend just flew by at record speed. I did manage to get quite a bit accomplished and I'm feeling pretty good heading into the new week.

Saturday was spent in showrooms making (trying to make) final decisions on new granite for the kitchen. I'm trying to keep it light in color as the back of the house, where the kitchen is located, gets little natural night. At first, I wanted to go with marble but we've been talked out of it by many people. We cook A LOT in our home and marble just didn't seem to fit in with our lifestyle. We've narrowed it down to two colors and I have to make the final decision this week as our new cook top has been ordered and is on its way. Did I tell you I'm being treated to a new one? Last week, while making dinner, I also provided a fireworks show. Yep, always a party here in our home. I shorted out two of the four burners! How you ask? I have NO idea! Thankfully my husband was home so no real damage occurred. After a long day of looking at stone, we met up with friends at our favorite sushi spot for a fun and relaxing evening.

Thoughts?

Along with millions of others, we hunkered down Sunday evening with high caloric, but oh so good, game food and watched the Super Bowl. This years gathering was on the smaller side and most enjoyable. It was a good game but I'll be honest, I'm really in it for the food, friends and commercials : )

Snow day ~ take 5

Bright and early I awoke to another 18 inches {but who's counting at this point} of white wonder. It is rather beautiful and certainly does provide for some lovely photos.

I noticed something rather comical from the inside the warmth of my home {and still in my jammies} on this particular snow day.

There is a dress code for snow blowing.
It must be highlighted in the owner's manual.
It reads: The individual operating the snow blower must wear a red jacket, black snow pants, black hat and gloves.
Every husband on our cul-de-sac was wearing the required garments in the offical colors. This is probably a good idea with the amount of snow were getting this winter as we might just lose them in a snow drift if they wore white.

When it snows; I bake. It's a rule!

I made a batch of these AMAZING cookies. They are chewy, chocolaty, and heavenly all in one bite! Warning ... they won't last long!

My poor little guys are SO off schedule, I am too for that matter. At the end of the day on Friday, I telling my students to have a nice afternoon and I'd see them tomorrow. Thankfully we haven't racked up enough snow days, yet, to warrant the need for school on Saturday.

Jack Frost was our host this past weekend in Vermont. He was the perfect gentleman and did his very best to insure that we were chilled to the bone during our entire stay. In fact, he went out of his way and dropped the temperatures to a balmy -30 with wind chill just for us. Such an invigorating treat!

However, we weren't about to let this spoil our fun. Despite the frigid weather, we prevailed and treated ourselves to all the winter sports and fun that Stowe had to offer. Thanks to a snow day here in Connecticut, our trip began earlier than expected.

With a few extra layers packed in our bags, we eagerly hit the road with childlike anticipation.

Growing up in Michigan my family had snowmobiles. Almost every weekend our friends and family would go up north to our cottage for skiing and snowmobiling. Being back in this mode brought back some really great memories. I had to include the photo of the snowmobile parking lot at the restaurant. You just gotta appreciate a place that offers areas for vehicles and snowmobile parking. The food was fabulous as well. If that isn't your choice of transportation, there is also the option of skiing in for dinner. I love the photo of the tree with skis parked right next door.

Please note the fashionable outfits and hair styles. One must wear half their winter wardrobe for the weeble wobble look. In order to master the flat lifeless hair style, you must don a helmet for several hours in a row ~ dedication I tell ya! Jealous, I know :)

I haven't laughed {to the point of tears} so hard in a long time. There was always something that put us into fits of laugher. The best one was Courtney riding along on her snowmobile and then falling over into a snow drift. We still have NO idea how she accomplished this difficult task but she did. With grace; nonetheless. We had to laugh when she came back with a map at lunch trying to explain the tricky terrain of our tour.

My photo does not offer justice to the Von Trapp Family Lodge. It was gorgeous! There are several buildings on the property all dressed up for their winter guests. It is a winter wonderland.

We ate and drank at some amazing places. There is almost nothing better than stepping into a warm room with a roaring fire and a host offering you a beverage after being out in the elements all day. The entire weekend we ran with the theory of play hard during the day and sit back and relax during the evening. What a treat!

We ladies did manage to find a few spare minutes to hit a couple of the sweet shops in town. I think my husband was rather proud that I continued my quest of stimulating the economy with a few fun purchases. Hope you're picking up on the sarcasm here :) I am very excited with my new antique champagne vessel. It’s much larger than anyone I’ve seen before. I’m not exactly sure what I’m going to use it for but one thought is a planter for spring bulbs.

No trip to Stowe, VT would be complete without a stop at the Ben and Jerry's homestead. Oh so yummy! They have flavors there that I haven't seen here in Connecticut. I tried my hardest to convince my husband we needed purchase a cooler so that we could bring some home. I came home empty handed ... next time I'll go prepared.

The winter weather isn't going away any time soon so I guess I'll just continue to find ways to enjoy the snow covered festivities!

Work in Progress

I'm not one to make resolutions. In the past I've tried, failed and then felt horrible for not seeing simple {what seemed at the time} tasks through to fruition.

This year I wanted to make some changes in my day to day life. Nothing drastic, just simple subtle changes to better myself.

So, I'm claiming 2011 as the year of me!

1.Reorganizing and decluttering

This process is in full swing. I listed out all the areas of our home in need and posted them in my Agenda. The hope is to accomplish 1~2 tasks each week. Each area was purposely divided into manageable amounts of time so that I can accomplish them and not feel stressed. I'm the type that "grows" projects until I'm in over my head and the project has taken on a life of its own. I've allowed for a couple days each week as catch up days in the event that a certain area takes longer than anticipated.

2. Bible study

I've joined the Beth Moore 10 week study. I'm loving it! There are 5 sessions each week that I view online. She is an amazing teacher and even through a computer screen, she is able to reach out and grab you. By the end of the session, I feel empowered and alive! I highly recommend this as well as many of her books that I've read.

3. Photography

Over the past couple of years I've dabbled here and there reading a few books, articles and blogs covering this subject. It's time to get serious. Just in time, Lisa is proposing two options that I'm very interested in taking. Funny how things have a way of working out just when you're in need of them. I've also just begun Project 52. Simply put, I take a photograph a week for 52 weeks. I'm fashionably late to the party but I'm fine with that. I wanted to keep this project seperate so I created a new blog, Simple Elegance. Doing this will also allow me to view my progress as well as create a book at some point if I'm interested.

4. General Ed Certification

After much thought, time and consideration I've decided to switch certifications. I begin classes in a few weeks. I'm really looking forward to this challenge and sitting in a seat rather than standing in front of the classroom. Well, for part of the day anyway.

5. Getting to know my husband

We are very comfortable in our roles and routines. I have no real complaints and in all honesty, I'm very happy. However, we've become complacent and predictable. I think this is true of many marriages that are years old. My husband has been on travel A LOT the past 7 months, we both have busy careers, on-going home projects, and various volunteer committees. I want to hone the focus back on "us" and find activities that we can share together and get to know the man I married again. My first proposal is working towards a 5k next fall.

The first month of the new year is off to a great start. I'm not feeling overwhelmed, stressed or pressured with my goals. This is a good sign!

I'll post my progress in a few months and let you know if I'm still on task.

Comfort food

Slow Cooker Chicken Pot Pie

4 boneless skinless chicken breasts, cut into bite sizes pieces
1 onion chopped
1 cup carrots, sliced
1 1/2 cup new potatoes, diced
1 cup Italian green beans
3/4 cup portabella mushrooms sliced
1/2 cup red pepper halved and sliced
2 cups spinach roughly chopped3~4 cups chicken broth
1 can low fat cream of chicken soup
1 can low fat cream of mushroom soup

1 package low fat refrigerated biscuit dough, torn into pieces.

1. Place all the ingredients in a slower cooker except the biscuit dough.

2. Cover and cook on low for 8 hours or high for 5 hours.

3. Place the dough on top of the of the simmering pot pie one hour before it's finished cooking.

This recipe takes on a different twist each time it's made. I throw whatever veggies I have on hand in the crisper or freezer. This time it had an Italian flair to it but next time who knows!

It's the perfect comfort food for any chilly evening.

I run on kicks where I use my slow cooker several nights in a row during the week. For me, it's the perfect solution to getting a delicious meal on the table after a long day in the classroom. The effort level is low {just a little organization is needed} but the presentation is impressive.

Can't beat that!

Snow day ...

We were treated to the true definition of a nor'easter. At 3:30 am I was awoken to loud claps of thunder and bright lightening! Not the most pleasant way to wake. I had to peek out and assess the progress of the storm. It was well underway.

The surrounding school districts called it correctly and canceled schools the night before. That is my idea of a special treat :)

This was taken at 6:30 am. By mid morning, the snow was over little Bentley's head. I had to go out and rescue him when he tried to follow Bozley.

Hard to tell, but this is an urn on my back patio. That is actually a small wall in the back drop. The inches of white continue to accumulate.

There is just something about a snowy night and a home lite with the warmth of light.We have a delay this morning.
While I'd love to enjoy one more day snowed in my home, I'll appreciate the return when June rolls around and we have one less day to make up.

Winter white

I'm with the theory that if it's going to be winter and the temperature chilly, then there should be snow. After all, the season would be wasted if we didn't have something to enjoy.

How can you argue with predawn beauty?

I love how everything is so fresh and crisp. The neighborhood was still soundly asleep when I snuck out for a few shots. I would have been too but the snow plow coming down our street took care of that. So worth it once I realized how beautiful my morning began.

This was the first one I took. It's very blurry and completely out of focus but I like it nonetheless. It has a warmth to it with the porch light on and the sun coming up.

Little Bentley's first real introduction to snow. He wasn't all that thrilled on the first take but once Bozley started playing around, he changed his mind and came around.

The romance of the fresh fallen snow had worn off and the reality of the situation at hand and looming.

Snow Removal!

We own a HUGE snow blower.
It has gears.
Ginormous blades.
It rotates
and even backs up.
I think it even has turn signals ~ I'm not joking.

I'll be honest, I'm afraid of it.
My husband has shown me how to operate this massive piece of machinery but in the back of my mind I'm saying s h o v e l!

Had I thought ahead, I would have hired a ~~hot~~ lawn boy to step in with such needs in my husband's absence.
Note to self!

A mere few minutes into my panic attack, the phone rings with a life line ...

Bill {neighbor} is coming over to do my drive. FABULOUS! I'll trade him his snow services for the use of our snow blower. He was thrilled {as all men are} to try out a new toy.

You've heard those horrible snow blower stories on the news. I don't care to be a headline feature any time soon.

Seriously, who needs something this big? We do live in civilisation; I've checked.

Oh yea, now I remember ...

You end up with one of these bad boys when you {husband} wait too long to purchase a snow blower and all the reasonable machines sell out.

I'm toasty warm inside my home while my generous neighbor tackles the elements.

This was no easy task. We have a loooog driveway.

Not only did he do it on Saturday but he returned Sunday morning when we awoke to a few more inches.

We are in for a big storm that is threatening over a foot and a half of fresh winter white on Wednesday.

No worries, Bill said he'd be over to help me out!

Mexican Soup

It's the perfect soup day here in Connecticut. We have a fresh blanket of snow with more on the way this evening. There is little better than warming up with a bowl of soup after all that shoveling.

Mexican Soup
1.5 pounds ground chicken {you can use beef if you prefer}
1 red onion, diced
6 cloves garlic {adjust this to your liking}
1 can green chilies, diced
1 package taco seasoning {we like the hot}
1 cup of water
2 28oz cans petite diced tomatoes
1 28oz tomato sauce
1 can chicken broth {a second can if you want your soup thinner}
2 cans black beans {rinsed well}
1 cup roasted corn {I buy mine frozen at Trader Joe's}

Toppings
sour cream
shredded cheese
avocado
cilantro

Saute the first three ingredients until just cooked. Add the green chilies, taco seasoning and cup of water. Mix together. Add the remaining ingredients and simmer for at least 30 minutes. Longer is better if you have the time.
The leftovers make a great lunch for the next day.

Quiet beginning

Our New Year was very quiet and laid back.

I wanted the color theme to be in whites and the focus on just relaxing and enjoy our friends.

White flowers in the winter, right after the holiday of green and red, was a bit of a challenge. The selection isn't all the glorious.

The men did all the cooking for the evening. We were treated to some yummy appetizers ~ I was too busy talking and forgot to take pictures.

My husband made a beef tenderloin with shrimp and scallop skewers on the side. We also had garlic mashed and green beans with fresh basil and lemon zest. Kevin is a great cook. If only he had more time to share those skills.

Why is it that everything takes so amazing when you don't have to do the cooking?

Life is back to normal in our home. Well, at least our normal :)

Holidays 2011

We are going to pretend that I am ultra organized and have already begun planning for next Christmas {please insert major humor and lateness of this post.}
Yep, that's what we're doing here.

I am self taught on the sewing machine despite the many attempts my mother made to teach me. Trust me, it wasn't pretty! Over the years I've learned to make curtains, shades, and various other projects for our home. However, anything that involves a pattern doesn't end well!

When Tessa posted that she had made stockings for her family my ears and eyes perked right up. I've been looking for white stockings for the past few years. I'm a little picky and I didn't want something that everyone else had in their homes.

Upon entering the dining room my husband presented two thoughts ...

First thought ~

K: Whatcha doing?

J: I'm making new Christmas stockings.

K: I wasn't aware that we needed new stockings.

J: Oh you silly man!

Second thought ~

K: Why aren't you doing this in your art room?

J: Ummm, have you seen that room lately? I think someone broke in and vandalized it; seriously!

Focus on the task ... almost done ... Santa arrives in a few hours; no pressure ... what was I thinking? ... no worries, we have back ups ... or do we? ... did I donate our stocking with the last bags to Goodwill? ... I can do this ... what time do the stores close on Christmas Eve?

Tessa assured me this was an easy project and that I would have no problems creating my own.

Was she aware that I would attempt this on Christmas Eve? In the afternoon no less? Did she know I would be mauled with questions by my husband? ;)

Finished and hung by the fireplace just in time!

I love how they turned out!
The monogram is just the perfect touch ~ such a clever idea of hers.

Santa was impressed with my skills {ha!} and filled it up to the tippy top.

I am loving our new family stockings. They are one of a kind and made with love. My brother wants me to make them for his family.

Not a problem since I'm ahead of the game this year! ;)

I spent the better part of the day putting away our Christmas decorations.

My heart really wasn't in all the hoopla of the holidays this year. There really isn't a reason that I can put my finger on. I just couldn't keep the spirit going for very long.

I was ready to take it all down the day after {actually before if I'm being honest with ya} Christmas but I talked myself into trying to enjoy it a for a few more days now that all the hype is over.

Nope, didn't work. It was becoming a source of major stress.

So, bright and early, I began the laborious process of dismantling the displays, pulling out the bins, wrapping the ornaments and tucking away the ever growing amount of holiday decorations. Whew!

After the roads were travel ready, from the blizzard, my hubby and I went tree shipping. We found a beautiful artificial {fake} Christmas tree. For various reasons ~ allergies being the biggest ~ we decided this would be the year to purchase an alternative decoration {my friend's description of fake trees} for next Christmas.

I offered to save this in a zip lock as a special reminder for my husband :)

This is one of the many traditions my family has for Christmas. It's been passed down many generations. I have some on my tree that my great grandmother gave to me. Each year in our stockings, Santa leaves a special ornament. I look forward to unwrapping this special gift every Christmas morning. This is only a small sampling of our collection.

One day when my son has a home of his own, with bittersweet emotions, I will pack up his hand selected ornament collection to decorate his Christmas tree.

Each ornament has a story, a memory or some significance.

Humpty Dumpty ~ When Nicholas was just a little guy I made him a humpty dumpty costume for Halloween. He was adorable if I do say so :)

Ice Skates ~When I was younger I took skaking lessons for many years. I even got to skate with the MSU hockey team ~ what a thrill!

Santa at the grill ~ Our yearly Oktoberfest with my husband manning the sausage on the grill.

Suitcase ~ My husbands never ending {or it seems} travel.

Bull dogs ~ Our bullies Max, Bozley and little Bentley.

Reindeer ~ My mother made him when I was a little girl and loved Rudolph.

Mitten ~ I have many as reminders that I'm from Michigan. They are very thoughtful gifts from friends and family.

Naval officer ~ My husband's college and career memories

Cupcake person~ Sweet gifts for those I'm always making and sharing cupcakes with throughout the year.

Santa mug ~ My parents gave my brother and I Santa mugs when we were very young. We drank hot cocoa from them and when they weren't in use, they displayed our candy canes.

Let it snow ...

We've had blizzard warnings here in Connecticut since last night for our area. There was a light dusting on the ground Christmas night but nothing to really get excited about.

We are singing a different tune now. The wind is picking up, the snow is falling a little faster and the roads are really slick. Kevin and I went out this morning and on our way home we saw 3 accidents along with numerous sliding and one very impressive spin out by a small truck. He handled it well and no one got hit or hurt. That's all it took for us to head straight home.

There is a cozy fire being tended by my husband, I'm making a pot chili for supper and most importantly ...

We are stocked for the blizzard of 2010 with plenty of red wine and chocolate! :)

The stockings were newly made {this very afternoon} with Tessa in mind

and hung, just in time, by the chimney with care {whew!}in hopes
that the NyQuil would soon kick in with the desired relief!

Our Christmas Eve plans went down the road less traveled this year. My husband informed me this morning that he wasn't feeling all that well. I loaded him up with over the counter, under the counter and anything in between medications that we had on hand.

He did a stellar job of holding his own for as long as he could before he waved the white flag. Poor guy knew how much I wanted to attend Christmas Eve service {such a beautiful welcome to Christmas}. A quick glance in his direction before dinner told me that we would be spending a quiet evening at home.

I'm all about the gift of giving unless it's germs!

So, Merry Christmas Eve to all, and to all a restful nights sleep! :)

Christmas quality time

My husband has been away for the month of December. As a result, we haven't spent any quality holiday cheer together. He arrived home this week and I wanted to share a little holiday festiveness with him.

What says romantic Christmas more than a carriage ride on a crisp
December evening with a light snow falling? The newly renovated Ocean House was hosting a carriage ride complete with a glass of champagne and hot chocolate. We snuggled in the carriage seat together for warmth against the biting ocean breeze. Our conversation was lulled by the pull of Silver our beautiful carriage horse as we talked and shared quiet moments while enjoying the beautiful scenery all aglow for Christmas.

It was a prefect night.

Afterwards, we went to one of our favorite restaurants close to home. The Daniel Packer Inn is a very quaint New England restaurant on the two main floors and a cozy pub in the basement. We know the owners and always enjoy when Allie stops by our table to catch up with us. There was a fire blazing in the big stone fireplace and everyone was filled with Christmas cheer. A table of ladies behind us were exchanging Christmas gifts. I must say they had great taste and I added a few things to my list as the gifts were unwrapped. I even had my husband turn around a few times so that he could see :)

One of my personal treats for the season is all the baking. It is really relaxing to me for some reason. Odd, I know :) I made several different varieties of cookies aside from my cookies that I made for my cookie exchange.

Our evening ended with the delivery of the cookie boxes. I've been told by friends that they look forward to their "special delivery" every year just before the big day.

Those simple words warm my heart all year long!

Cookie Exchange

Each holiday season I look forward to this day. It's just for us ladies and I try to go all out for our gathering. We get one afternoon in the crazy busy month of December to eat, drink and be merry. The husbands and children don't mind a bit as the women walk out their front doors. They all know there will be a tray of goodness arriving a few hours later.

We were a little smaller in number this year due to illnesses and holiday obligations. When finding a date, I always try to pick a Sunday afternoon in the middle of the month and it's always at 3pm. This works well for my friends with small children, dinner hours and other commitments of the season.

The amazing cookies on display. I've been hosting my Cookie Exchange for many years. Never once, have we had duplicate cookies. Each year we try a new recipe for our event. It's actually a lot of fun trying to top what you've done the year before.

This year I offered two festive beverages. The first was a pomegranate sparkler and an eggnog martini. I borrowed this idea from a sweet blogger. Thanks, it was a huge hit. I tweaked it just a tad to fit my taste.

My neighbor took this photo. She has recently started a photography business. She has a much more artistic flair to her photos than do I.

It's time to get down to business!

We each bake 6 dozen cookies. The number of attendees dictates the number of cookies we each take. Yes, we also take some of the cookies we brought as well. This is just how we do it but there are various "rules" to the exchange.

These are the cookies I made this year. Chunky Chocolate Gobs from Southern Living. The name isn't all that appealing but they are delicious!

The trays are filling up and mouths are watering.

Ellen shared with me that her boys sit by the window awaiting her arrival home. Well, maybe not her so much as the cookies :) Each year her boys ask, as the season approaches, when she is going to the cookie day.

Mine are safely tucked away in the deep freezer. Let's be honest. If they were out in plain site I'd be 10 pounds heavier! Since we're being honest here, I might as well share with you that I have been known to sneak down and eat a frozen cookie from time to time ;)

This weekend I hosted my annual Cookie Exchange. I wanted to serve a fun and festive cocktail full of holiday cheer.

When my guests arrived, they were offered a pomegranate sparkler. I placed a scattering of pomegranate seeds in the bottom of each champagne glass. The effect was just what I was wishing!

The silver tray was my mother's and one that I use daily in our home. Not only is it functional, it offers years of wonderful memories from my childhood.

Cute and Cozy

The weather is turning and we are in for some really cold weather this week. After the hideous rain {coming down in all directions} for most of the day yesterday our home had a damp and cold welcoming this evening. I started a fire and began my nightly routine. Within minutes our home was warming up and I was beginning to relax.

Because Bentley is still a puppy and ever so fond of our Christmas tree and decorations, I have to keep a close eye on him. At one point this evening he disappeared and I couldn't find him. He has a knack of becoming invisible. I looked every where for his wrinkly little body. He has learned how to climb stairs so I scoured all the bedrooms and baths on the second floor. No Bentley. When I was descending the stairs, I caught a movement from the corner of my eye. Our little fur ball climbed up onto the hearth and was lounging by the warmth of the fire. Once he saw the camera, he sat up to "pose" for a few shots. I really wanted to get him laying down. Too funny!

Holiday funk

Just when I think I'm in the game ... wham!

I'm feel stressed, running in all directions, and getting little accomplished. I feel like one of those hamsters on an exercise wheel going around and around and around but never getting anywhere. Christmas is only two weeks away and I'm beginning to fear {still have loads of shopping, wrapping and baking} its arrival.

Our home is dressed in its holiday finest. Most of the decorations are out, the tree is up and looks lovely, the candles are in the windows, the wreath on the door but I just can't seem to really get into the spirit this year. I'm on auto pilot and my hearts not really in it.

I'm waking up earlier to try and get a few things checked off my list before heading to my classroom and I'm going to bed later in hopes of being more prepared for the day ahead. It's not working. I constantly feel like I'm running and rushing and not really enjoying all that this season promises to offer.

I'm slowing drowning in holiday cheer. My calendar is packed with fun but it's stressing me out. If I didn't have to worry about laundry, cleaning, meals and work I'd be all set. Speaking of my job, that's a whole load of additional cheer to be spread. I'm in charge of the Mitten and Hat tree and the staff Christmas breakfast. Again, I enjoy these projects but I'm missing something this year. It more of an effort than joy.

This weekend is my annual Cookie Exchange. I look forward to it every year. It's a fabulous afternoon with my girlfriends and we all enjoy our trays of Christmas cookies. We eat, drink and enjoy some merry girl time. Guess what ... I'm stressing over this one too! I have appetizers to make, six dozen cookies to bake, the house to clean, gift bags to assemble. I need to rent an elf to help!

Perhaps I need a holly jolly attitude adjustment.

Am I the only one feeling this way?

Celebrating for a Charity

This is my favorite part of the holidays. It involves bringing smiles to children. Many of them are in great need. Some are too young to understand this and others struggle with the pressure of knowing the financial needs of their family and all that it involves.

A few years ago, I was asked to join the Child and Family Agency. I was already heavily involved with other organizations and felt, at the time, I couldn't take on any addition commitments. Something, within, pulled me to do a little research into the organization. I am SO glad I did this as it is a perfect fit to my outlooks and personality.

This weekend we had our yearly auxiliary Christmas celebration. There were basket raffles, cookie and candy, poinsettia, and book sales. The turnout was a record high and the sales outdid our wildest expectations.

Above is the baking basket I put together. It was filled to the rim with goodies to create family memories and delicious items for all to enjoy.

At the end of the night I was the lucky recipient of an incredible basket. Unfortunately, I can't share it with you as it will be part of my husband's Christmas gift. Every now and then he peeks in on my blog so I don't want to ruin his surprise.

Getting into the spirit

I wanted something new for our front door this Christmas season. This year I want to keep it simple and classic.While shopping over the weekend I picked up a few goodies. This afternoon I laid them all out on the dinning room table to create a wreath for my front door, swag for the mantel and accent pieces for on top of the entertainment center.

When all was done and said, I was very pleased with the outcome.

This is my sad attempt at a tutorial {you've been warned} ...

Begin with a basis plain evergreen wreath.

Add a wreath that has potential but looks a little sad all by its lonesome.

Secure it to the evergreen wreath with wire. Whatever you have on hand will do just fine.

Select a few holiday picks. This was one that I turned into three individual holly. I used wire cutters to separate the flowers.

I thought a little more dressing up for the big day was in order.

These picks remind me of tiny ice crystals and sparkle rather nicely when the light hits them. They are really silver and clear but the flash added the additional colors.

I love it when a project turns out even better than envisioned. I can't wait to hang it from our front door to welcome our guest during the holiday season.

The mantel swag is waiting for the paint to dry. In the process of selecting colors and a designing my holiday sway, I decided that the mantel was due for a fresh coat and new color of paint. Much to my husband's chagrin, I dedicated a portion of my afternoon to painting. I love the new color and can't wait to dress it up for the holidays!
