Let's start the new season off with a hearty {and yummy} breakfast. I'm not sure if this is more breakfast or more dessert. Either way, it's delicious!

Baked Pumpkin Oatmeal


~Hearty


~Yummy


and semi ~ healthy!

1 1/2 cups oatmeal
1/2 cup syrup {don't use the good stuff}
2 1/2 tsp pumpkin pie spice
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup dried blueberries {or any dried fruit of choice}
3/4 cup diced apple
1 cup low fat milk
1/2 cup pumpkin
1 large egg

Combine all ingredients and stir well. Let this rest for at least 20 minutes. This allows them to combine and moisten. Divide into four greased small bowls. Place on cookie sheet and bake at 350 for 25 minutes or until golden brown.

* I make a double batch for the work week and just reheat it in the morning. It's a great way to start the day and smells wonderful! :)

* I don't remember where I found the original recipe. I've adjusted the recipe to please our tastes. This recipe is very forgiving and welcomes new ideas.

I would love to make this, however, there seems to be a pumpkin shortage here in our area.
I asked the check
out clerk at the grocery when they might be getting their canned pumpkin in and he replied, "when it comes in, we'll get it when we get it". I was a little shocked at his reply, but even more shocked to see all these blogs where there seems to be no shortage of pumpkin. What is going on here that we can't get canned pumpkin? Moreover, what is going on with the Safeway checkout clerks and their cheeky responses?

Oh my...I HAVE to try this! I really would rather NOT divide into 4 bowls though...I'll take it all....in one big dish! Ha! Happy fall ( finally)! Yeah!

mmmm!!!! quick question....the amount of syrup? i'm guessing 1/2 cup, but wasn't sure. 1/2 a TBSP didn't seem like enough, 1/2 a bottle seemed too much. anyway would love to make these this week. thanks!!!

I just tried your recipe and LOVED it!!! I ended up using fresh blueberries because I had them on hand. It turned out really yummy. I'm planning on making this again soon. Thanks so much for sharing.

What a fun way to invite. We went up the canyon tonight and built a fire and did dutch oven cooking. Of course, now I smell horrendous but I do love the cooler weather for fire building. I think your idea is definitely one we should use to invite friends over for a nice fire.

PS - Pumpkin can still be found here in Atlantic Canada - thankfully. Plus there's oodles of home grown.
