The past week and a half has been insanely busy in my world. I often find that the month of May is busier for me than the Christmas season.
Each night I fall into bed with the best intentions of accomplishing all tasks for the next day and then some ~ yah right!
 I’m falling short and sinking fast.

I love my grill this time of year.
It’s quick, easy and in no time an entire meal is ready to be served. This is a family favorite that I’ve been making for years. I often make extra for leftovers. My salad for lunch tomorrow will feature the chicken along with red peppers, avocado and tomatoes.




Grilled Chicken & Sausage skewers

8 hot Italian sausages

1 cup olive oil

2/3 cup fresh lemon juice

½ cup red wine vinegar

6 large garlic cloves, minced

¼ cup Dijon mustard

¼ cup mixture of thyme, basil and fennel seed

1 tsp salt

1 tsp pepper

8 boneless chicken breasts

2 lemons, thinly sliced

Place sausages in pan. Add enough cold water to cover partially and simmer until firm. About 12 minutes. Drain and let cool.

Marinade ~ combine the next 8 ingredients and mix well.

Cut the sausages and chicken into bite size pieces. Add to marinade and let rest for at least one hour {the longer, the better}.

Place on skewers alternating chicken and sausages ~ add lemon slices as desired

Grill until chicken is completely cooked



* I often make half the recipe

*This is also very tasty without the sausage

Grilled broccoli is delicious with a little sesame oil and french grey sea salt.

How do you add the oil to your broccolli? Whenever I toss them in oil they soak up way too much :O(

What a delicious dinner! I love grilled chicken kabobs. I have a recipe that uses a little corn syrup, soy sauce, ginger, and sesame seeds. YUM! I love it when the onions are crispy and carmelized!

The skewers sound great...always looking for a new way to jazz up a skewer! I have never tried grilled broccoli...but I am all about trying it now.

I completely understand your stress this time of year! While I am counting the days (18!!!) until the end of school, I also keep thinking of all I still need to do.

I agree about May. It is THE busiest month over Christmas. Between the projects, spring cleaning, the kids' school wrapping up and plans for summer... it never ends!

I too find MAy to be tTHE BUSIEST month. It is hard to explain to people but all the end of year school stuff and sports is CRAZy around our house. This meal looks delish!
