Thanksgiving

Friday, November 25, 2011 | | 12 comments
We had the perfect Thanksgiving this year. There is so much to be thankful for and we are really blessed to have such wonderful family and friends that are a part of our daily lives.

This year we have been going at top speed most days. After awhile, this pace gets rather exhausting. With that being said, we both craved some major down time.

Our day was relaxing and slow paced from start to finish.

Our menu consisted of many traditional dishes but I tried to lighten the calorie load a tad ~ still very yummy!

I made a pumpkin roll for the first time. I've always been afraid to try anything that required "rolling" as I failed horribly at this process years ago.

Good thing I gave it a whirl because it was AMAZING!

We watched the parade, took a walk, watched a lot of football, read a little and, I even started my Christmas cards.

It wouldn't be Thanksgiving if there wasn't a little napping involved :)

Hope you all had a wonderful Thanksgiving as well.

Just a little fun
I've seen these cute pumpkins all over blogville this season.
Some of them have just one sweet initial, some spell out words such as BOO or FALL, others have silhouettes of jack~o~lanterns or witches and they are all adorable!
I grabbed one of these white pumpkins right after Halloween
when they were just about giving them away. With all the great scrap booking paper they add to offer it was hard to chose which print but I narrowed it down to a pretty golden yellow with red {hard to see in the picture}.
I pulled out the Cricut machine and zipped off my husband and my first initials for either end and our last initial to place in the middle.
Because everything looks better with a few polka dots, I added a finishing touch of brown and copper polka dot ribbon.
It's just the perfect addition to our limited Thanksgiving decor!

Pumpkin Goodies

I found these cuties at Michaels on a wicked clearance sale. They needed a little dressing up so I showered them in Martha Stewart glitter. They are sitting pretty in my dinning room just waiting for Thanksgiving
Pumpkin Yummies
Pumpkin Cobbler
I made this for my family and they loved it. Make it the day before you serve it, the flavor is so much better.
4 eggs, beaten
15 oz. can pumpkin
12 oz. can evaporated milk
1-1/2 c. sugar
2 tsp. pumpkin pie spice
1tsp. salt
1 package yellow cake mix
1 c. chopped pecans
1 c. melted butter
Optional ~
vanilla ice cream, whipped topping, chopped nuts,
cinnamon or nutmeg sprinkled on top
Combine eggs, pumpkin, evaporated milk, sugar, spice, and salt. Mix well and pour into an ungreased 13x9 baking pan. Sprinkle cake mix and nuts over the top. Drizzle with butter, do not stir.
Bake at 350 degrees for 45 minutes, testing for doneness. Serve with optional toppings if desired.
Enjoy!

I'm holding on to the fall season for as long as I possibly can.
