Sunday Salad

I must admit that this is a major comfort food for me. Quite often when my husband is away on travel I'll make it for supper {or lunch} numerous times as I just can't seem to get enough.


This "recipe" can be as easy or as intricate as you like. In my family we've come to really enjoy pizza on the grill. The flavor is amazing and the options are endless. To be honest, I don't think we have ever made the same combination twice and we've been doing this for years! I've purchased frozen pizzas at Trader Joe's before and used them as my base when I was busy or in a rush. The Mediterranean pizzas are my favorite but that is a personal preference. Any would work nicely.


This is the recipe I used in the photos. Give it a try; I know you'll be hooked ;)

Pizza Salad


Pizza
Pizza dough {I use Trader Joe's}
4 cloves of garlic pressed {use the amount you like}
5 tbsp. olive oil
*Combine the garlic and oil for the "sauce"
Handful of baby spinach
1 cup of fresh mozzarella cut into thin slices
2 medium tomatoes sliced
Roasted red and yellow peppers
1 grilled chicken breast sliced


Salad
Mixed greens {amount depends on how big of a salad you desire}
Chopped fresh yellow, orange and red peppers
Roughly chopped tomatoes
Dressing of choice
Toss together and add dressing. Let sit while pizza is cooking


Place tiles or stone on grill and heat to low temperature. I divided the dough into 3 small balls for three pizzas. Place dough on grill tiles and cook just until slightly done. Flip the dough and layer the ingrediants starting with the cheese, spinach, tomatoes, chicken, and finally roasted peppers. Remove from grill and let cool just slightly. Cut pizza into manageable slices so that it isn't too difficult to cut once served. Add tossed salad to top and again let it sit for a few minutes so that the lettuce begins to wilts.

My gf bbq's her pizzas all the time and the flavor is amazing. She usually tosses a simple arugula salad to put on top and it's to.die.for.

Jo, I never thought one could make pizza on the grill! I too love the TJ dough. I will try this when I get home but I have to find a pizza stone I guess. I took a pic for you yesterday; I have maxed out my camera and laptop on space with photos and video and hope to get it sorted out later today....bisous from Beaune,A

Mmmmm looks yummy! I hardly ever use the grill - I should try pizza on it!

My fave pizza is cheese and sauce with baked beans on top :O) YUM!

Your pizza looks yummy and thanks for sharing the recipe.
My Husband cooked pizza on the BBQ grill the other night and the flavour was delicious.
He is talking of building a pizza oven outside, which I am excited about.

Jo this looks absolutely delicious! I do love grilled pizzas, such a nice change of pace and great flavor too. Love that this recipe just uses olive oil and garlic for the sauce, yum yum! Pizza and salad, two of my favorite things all in one! :)

My luck I am starving and see this delicious pizza. That sound is my stomach growling! As for the cupcake toppers - do you mean the round ones that everyone has on their blog? It seems the trend is to buy downloadable files that someone has created digitally and you punch them out with a 2 to 2 1/2 inch plain round or scalloped edge punch. There are many available in Etsy. You could always make your own with scrapbook papers, etc. if you don't make them digitally. Now I'm curious what you have planned! :) xoxo

yum! we don't have trader joe's but i can get some pretty good pizza dough from our local Earth Fare store and i make something similar to this! i love having ppl over and letting them make up their own by choosing all different toppings! your images are always so amazing!

While that looks super delish, I think I have to teach you about comfort food. It's technically the stuff that isn't good for you and doesn't have the word "salad" in it. lol. :) Just kidding!! I guess I can kinda give it to you since it is a pizza. And pizza is my number one comfort food!
