Souper Sunday


This is currently going on in our backyard ~ yes, it has started snowing again!

A perfect night for soup.


Mexican Chicken Soup

A family favorite


1 large onion, chopped

6 cloves of garlic, minced

1 cup cilantro, chopped

4 tbls olive oil


1 can green chilies, chopped

1 28 oz. can diced tomatoes with juice

1 can creamed corn

1 can black beans, drained and rinsed

3 tbls cumin

2 tbls chili powder

1 tsp cayenne pepper

2 bay leaves

pinch of salt

8 cups chicken stock

3 chicken breasts shredded



Garnishes

Sour cream

shredded cheese


Saute the first 3 ingredients in the olive oil. Add the chilies, tomatoes, corn, black beans, cumin, chili powder, cayenne pepper, bay leaves, salt, chicken broth, and bring to a boil. Reduce to a simmer for 45 to 60 minutes. Remove the bay leaves and add chicken. Continue to simmer until chicken is heat through ~ about 10 minutes

Top with garnishes and enjoy!

Wow, your soup sounds yummy. I make a chicken tortilla soup, but this is a little different. I'm going to have to try your recipe...thanks for sharing.
