When time is tight and you're trying to eat healthy it becomes a challenge to achieve the desired goal.

I think I accomplished my mission with this delicious seared scallops and asian slaw salad. The combination of flavors and ingredients is amazing and so fulfilling.

Give it a try ...

6 cups of thinly sliced napa cabbage
1/2 cup red radishes*
1/2 cup sliced red pepper*
1/2 cup thinly sliced carrots*
1/2 cup thinly sliced (length) green onions*
1 cup blanched snow peas*
4 tbs rice vinegar
3 tbs soy sauce
3 tbs dark sesame oil
1/2 tsp crushed red pepper
18~20 large sea scallops
salt and pepper

*Combine the first 6 ingredients and set aside

*Mix together the rice vinegar, soy sauce, 1 tsp sesame oil, and red pepper. Set aside.

*Heat the remaining oil in a pan over med high heat. Place sea scallops in pan and sprinkle with salt and pepper for taste. Cook for approximately 4 minutes on each side.

*Plate the cabbage and veggie combination. Place desired amount of scallops and drizzle with the dressing.

*Feel free to add more veggies or even different ones if desired ~ the more, the merrier!

Uhmmm....wow! This is making my mouth water. I think one of my favorite foods on the planet is seared scallops. Can't wait to try this!!

Jo this looks delish and healthy. I have been getting bored with salads and needing some new tasty but healthy recipes. I'll give it a try but without the red peppers. That is the one food I just do not like at all. I know crazy right?
